Quiche

ImageUpon readers’ request, here’s the base for my Quiche recipe. It might fit in just perfectly once you’ve gone through all the Christmas left-overs and need something light to go with a few greens. Super to prep for a picnic too! Be creative with new ingredients and flavours and throw in whatever you’ve got left lying around on your kitchen table.

Pre-heat your oven to about  180 C degrees.

Dough

1 cup chickpea flour

1 organic egg

bit of salt

apprx 50g organic butter

Mix all ingredients together until a soft dough forms. Roll flat and press into a cake tin, pulling up the walls. Pick with a fork. The little wholes will give the crust a certain crunch later on. Put in the fridge.

Filling

1 cup sour cream

1 cup thickened cream

2 eggs

1.5 cups cheese

1 zucchini

1 big leak

handful sun-dried tomatoes

in my last one, I added a small handful of hemp seeds for some extra protein – be creative

Wash and cut leek and zucchini into small pieces, then gently stir with a bit of olive oil in a pan for a few minutes. Add creams with egg, then stir in cheese, veggies and tomatoes. Pour into the dough form from the fridge. Put in the oven for about half an hour. Once out, leave for an hour (if you can) before serving. This will make it less runny when cutting. Merry Christmas.
